Strawberry Cream Cheese Muffins

Strawberry Cream Cheese Muffin Recipe


Heaven in a muffin.  Craving the most delightful.



1/4 cup Flour (all purpose)

1/4 cup Sugar (granulated)

1 tsp ground cinnamon

2 tbs firm (chilled) butter


2 cups Flour (all purpose)

1/2 cup Sugar (granulated)

2 tsp Baking Powder

1/2 tsp salt

1 egg, slightly beaten

1/4 cup vegetable oil

1 cup milk

1 tsp vanilla extract

2 cups strawberries, cut into small pieces


4 oz. softened cream cheese

1/3 cup Sugar (granulated)

2 tbs  egg, beaten

1 tsp vanilla extract


Preheat oven to 400°f

Grease or line muffin pan with cupcake liners.

Make topping:  Whisk together 1/4 cup flour, 1/4 cup sugar, and 1 tsp cinnamon – mix thoroughly.  Cut in 2 tbs firm chilled butter with pastry cutter until mixture is crumble – crumbles about pea sized.  Set aside.

Make batter: whisk together dry ingredients of 2 cups flour, 1/2 cup sugar, 2 tsp baking powder, and 1/2 tsp salt.  Then in a separate bowl, whisk the wet ingredients of 1 slightly beaten egg, 1/4 cup vegetable oil, 1 cup milk, and 1 tsp vanilla.  Mix wet ingredients with dry ingredients.  Mix just until wet ingredients are wet – Do Not Overmix.  Set aside.

Prepare strawberries:  Cut strawberries into small pieces to make 2 cups worth of chopped strawberries.  set aside.

Make filling: beat 4 ounces (half a package) of softened cream cheese with 1/3 cup of sugar until fluffy.  Add 2 tbs of beaten egg mixture and 1 tsp vanilla.  Beat until mixture is fluffy.  Set aside.

Make Muffins:  This is done in layers.

Put 1 tbs of muffin batter in each lined muffin well.

Add a few chopped strawberries in each muffin well – use half of chopped strawberries.

On top of strawberries, add 1 tsp of batter in each muffin well.

sprinkle half of topping mix evenly in each muffin well.

put remaining batter on top in each muffin well

put remaining half of chopped strawberries on top of each muffin evenly.

sprinkle remaining topping on each muffin evenly.

Bake Muffins: Bake at 400°f for approximately 22-25 minutes.  Muffins are done when knife or toothpick inserted in the middle comes out clean.

Cool muffins on rack before serving.
